When Cattle Walked to Market

Highland drovers and the American cattle trails: two industries, separated by time and place, that found remarkably similar solutions.

Although they developed on different continents and under different circumstances, the Scottish and American cattle trades followed remarkably similar paths as they adapted to geography, distant markets, agricultural settlement, and changing transportation.

The Scottish droving trade was well established long before the great post–Civil War cattle drives emerged in the United States. For centuries, cattle from the Scottish Highlands and Islands were driven south toward the great markets of Scotland and the richer grazing lands of England. After the American Civil War, Texas cattle were driven north toward railheads in Kansas and markets farther east. The two systems were separated by time and culture, yet each confronted the same fundamental problem.

Cattle were plentiful where land was rough, forage was inexpensive, and ready money was scarce. They were worth considerably more in distant places where they could be fattened, slaughtered, and sold to growing populations. Scottish accounts describe Highland cattle traveling through Crieff and Falkirk and continuing to English pastures before being sold in cities such as Manchester and London.1 In the United States, Texas cattle worth about four dollars locally in 1866 could bring roughly forty dollars in northern and eastern markets.2

In both places, hardy cattle provided the same practical solution: walk the animals from inexpensive grazing country toward richer finishing land or transportation that could carry them to market.

Then the same forces that expanded those markets—agricultural change, settlement, and improved transportation—gradually brought the era of long-distance droving to an end.

The Scottish problem: cattle as movable wealth

The western Highlands and Islands of Scotland were not naturally suited to intensive crop production. The climate was difficult, winters were long, and much of the ground was wet, steep, or poor. Cattle could convert forage that people could not use directly into an animal that could be sold.

But producing cattle was only half of the problem. The larger concentrations of people, wealth, and finishing pasture lay to the south.

The solution was droving. Cattle were gathered from islands, glens, and remote farms and moved along a network of routes toward markets, or trysts, such as Crieff and later Falkirk. Some animals changed hands there and continued south into England, where better pasture could restore the condition lost on the journey and prepare them for slaughter.

Organized droving to established markets became an important part of the Scottish economy after the 1707 Union of Parliaments made cross-border trade easier. The routes did not form a single fixed highway. Drovers selected paths according to terrain, weather, grazing, river crossings, and their destination. Across the Highlands, cattle converged on the major trysts from many smaller local routes.34

Highland cattle were particularly well suited to this system. They combined traits that mattered under Highland conditions: hardiness, soundness, moderate size, thriftiness, and an ability to live on rough forage and later respond to better feed. Historical accounts describe large numbers of two- and three-year-old cattle traveling from the Highlands and Islands to Scottish fairs and then, in many cases, another several hundred miles into England for finishing.

Good feet and legs were essential. The cattle might travel ten to fifteen miles a day over rough ground and occasionally swim swollen rivers.1 A larger, more feed-demanding animal might offer advantages on an improved farm, but in the Highlands the cost of maintaining that animal could outweigh the benefit. The useful animal was the one the country could support—and the one that could still reach the market in saleable condition.

Agricultural change first expanded the trade—and then displaced it

At first, agricultural change helped the trade grow. Greater political stability, improved roads, expanding English cities, richer finishing pastures, and more organized markets increased demand for Highland cattle. Droving became one of the ways remote Highland producers participated in a growing commercial economy.

Later, many of those same changes worked against it. More land was enclosed, drained, cultivated, and treated as private agricultural property. Passing cattle could damage crops, fences, roads, and improved fields. Traditional resting places and grazing stances became harder to use. Towns and landowners had less reason to tolerate large herds moving slowly through settled country.

Transportation also changed the calculation. By the 1830s, steamships were allowing cattle to be sent more directly to southern markets. Railways later provided an even faster and more predictable alternative. Cattle no longer had to walk every mile from their place of production to their finishing ground or final market.4

This was not merely the disappearance of an old road. It was a reorganization of the cattle economy. Agricultural development first increased the market for Highland cattle, then altered the landscape and transportation system upon which traditional droving depended.

The American problem after the Civil War

The postwar United States presented the same basic economic problem on a much larger landscape.

During the Civil War, many Texas herds received little attention, and cattle multiplied on the open range. When veterans returned, Texas was rich in cattle but poor in cash. The Oklahoma Historical Society reports that by 1866 cattle worth only about four dollars per head in Texas could be worth forty dollars in the North and East.2 The price difference created an opportunity, but the Texas railroad system remained limited and disconnected from the main rail network. The cattle had value only if someone could move them to where the demand existed.

The Spanish-derived Texas Longhorn was suited to that task. Longhorns could live on sparse range, travel long distances, and endure heat, weather, insects, and irregular feed and water. Like Highland cattle in the Scottish droving economy, their importance came from their fitness for a particular production system—not from superiority in every trait that cattlemen might value.

Before and immediately after the war, drovers attempted to move Texas cattle toward Missouri destinations such as Sedalia and St. Louis. Those eastern routes became increasingly difficult. Farms were spreading across southern Missouri and eastern Kansas, and trail cattle sometimes trampled crops and damaged fields.

An even more serious issue was Texas fever. Longhorns could carry infected ticks without appearing sick, while susceptible local cattle could die after exposure. Farmers were not objecting merely because they disliked drovers or wanted exclusive use of the roads. They believed the passing herds threatened their livelihoods. Missouri and Kansas enacted restrictions and quarantine measures against Texas cattle. A National Park Service study identifies settlement, crop damage, lawlessness, and especially tick fever as major obstacles to the older eastern routes.5

The answer was to move the point of connection westward.

In 1867, Joseph McCoy developed stockyards at Abilene, Kansas, near the western edge of settled agricultural country and along a railroad that could carry cattle toward Chicago. Drovers followed several routes through Texas and then converged on the trail across Indian Territory that became famous as the Chisholm Trail.

Other cattle towns—including Ellsworth, Wichita, Caldwell, and Dodge City—rose or declined as settlement, quarantine lines, and rail construction shifted. The cattle drive was therefore only one part of the transportation system. It was the moving link between the open range and the advancing railroad.

As farms and towns spread west, barbed wire divided the open range, quarantines tightened, and rail lines penetrated cattle country. Long drives became less practical and less necessary. As in Scotland, the cattle industry did not end when droving declined. It reorganized around ranches, fenced pastures, railroads, stockyards, livestock commission firms, feed supplies, and packing plants.

The similarities are substantial, but so are the differences.

Scottish droving developed over centuries within Britain and linked Highland producers to Lowland markets and English graziers. The great American cattle trails were a shorter, concentrated response to the economic disruption following the Civil War and the rapid westward growth of railroads and settlement. Texas fever added a biological conflict with no exact equivalent in the Scottish comparison.

Both industries responded to the same relationship among land, cattle, distance, and value. Each developed a system in which animals raised on inexpensive grazing walked toward better feed, larger markets, or transportation. Each system then declined when settled agriculture restricted the routes and new transportation made the long journey unnecessary.

What the cattle were selected to do

When cattle had to walk to market, the ability to travel was an economic trait. So were sound feet and legs, moderate maintenance needs, hardiness, foraging ability, and the capacity to regain condition after stress. An animal that looked impressive but could not live on the available country or withstand the journey was of limited use.

When ships and railroads reduced the journey, selection priorities could change. Producers could place greater emphasis on weight, rate of gain, earlier finishing, carcass yield, and consistency. Improved pastures and more controlled production systems allowed managers to direct breeding and nutrition more closely. Stockyards and packing plants rewarded a more standardized product.

That does not mean the old traits stopped mattering. It means their economic weight changed.

The continuing question for Highland breeders

The Highland animal was not developed in a feedlot, a show ring, or a modern performance-testing program. It was shaped by poor forage, difficult weather, long journeys, and the requirement to recover and finish when better feed became available. Understanding that production system helps explain both the strengths of the breed and the challenge facing modern breeders.

History deserves to be preserved, but preservation does not require pretending that the production environment has remained unchanged. Modern Highland cattle are rarely expected to walk from the Hebrides to an English finishing pasture. They are expected to reproduce reliably, use forage efficiently, grow at an acceptable rate, produce a useful carcass, and provide an eating experience that gives consumers a reason to seek out Highland beef.

The lesson of the droving era is not that breeders should select cattle exactly as their predecessors did. It is that useful cattle are always defined partly by the conditions in which they must work.

For Highland breeders today, the responsibility is twofold: preserve the functional qualities created by the breed’s history while objectively identifying the cattle that can meet current expectations. Pedigree and appearance remain part of the story, but performance records, genomic information, ultrasound measurements, reproductive history, and carcass results can tell us whether an animal is actually delivering the traits we value.

The old drovers selected under severe conditions because failure was visible on the road. Modern breeders have more precise tools, but we face the same fundamental question:

What should we expect of our cattle—and are we measuring whether they can do it?
